Spicy Salt Prawns

 

Ingredients

  • 500g prawns
  • 50g diced pumpkin (optional)
  • 20g green peas (optional)
  • 6 sprigs fresh coriander
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 tablespoon chilli oil
  • 1 tablespoon white wine


Instructions

  1. Clean prawns and bathe in 90°C water. 
  2. Add salt and wine to the water.
  3. To remove the heads, simply twist the head to remove it.
  4. Then, remove the shell then cut out the veins.
  5. Bathe cleaned prawns in cold water. Drain and set aside.
  6. Cook diced pumpkin and peas in boiling water. Cool and mix with prawns.
  7. Heat pan with oil on medium heat.
  8. Add chopped coriander and 2-3 tablespoons water. Cool and sprinkle over prawns.
  9. Sprinkle salt and chilli oil over prawns and serve.

Egg Stuffed Baked Potatoes

 

Benefits

  • 2 potatoes (pre-baked)
  • 2 eggs
  • butter
  • cheddar cheese (or other cheese of your choice)
  • onions / broccoli / asparagus (or other vegetables or meat of your choice)
  • salt and pepper (seasoning)

Instructions

  1. Pre-bake potatoes for an hour. Cool and set aside.
  2. Preheat oven at 180C.
  3. Cut baked potatoes in half or just the top off.
  4. Scoop out 2/3 of the flesh and save it for other use.
  5. Carefully insert shredded cheese at the bottom of the potatoes.
  6. Then lay some vegetables of your choice on top of the cheese till potatoes about 2/3 full.
  7. Crack an egg right on top and season with salt and pepper.
  8. Sprinkle more shredded cheese over the top.
  9. Bake for 20 minutes or till the egg whites are set but yolk still slightly runny.
  10. Serve hot.

Creamy baked mashed potatoes






Ingredients


  • 4 potatoes (peeled, diced)
  • 1/2 onion (finely chopped)
  • 50g Parmesan cheese
  • 40-50ml fresh cream
  • 20g butter
  • 1/2 teaspoon curry powder
  • salt and pepper (seasoning)

Instructions

  1. Boiled diced potatoes in hot water till soft.
  2. Drain after cooking.
  3. Preheat oven at 240C.
  4. Use a masher or a large fork to mash potatoes.
  5. Add butter, mash till butter melted.
  6. Add Parmesan cheese, mix till all melted.
  7. Add finely chopped onion and mix well.
  8. Add curry powder, salt and pepper for seasoning and mix well.
  9. Pour mash mixture into baking tray.
  10. Bake for 10 minutes or till golden brown.
  11. Serve hot.

Homemade Baked Fries

Have these fries without saturated fat and guilt free.

Ingredients

  • 2 bake potatoes
  • 2 egg whites
  • 1 1/2 teaspoons vegetable oil
  • salt and pepper (seasoning)

Instructions

  1. Wash and scrub potatoes, pat dry.
  2. Cut into desired length and thickness. Then pat dry again.
  3. Preheat oven at 220C. Place foil on baking tray and grease with vegetable oil, then place tray in oven to preheat as well.
  4. In a bowl, beat egg whites til foamy.
  5. Add potatoes stripes to egg white foam. Make sure each stripe is coated all over.
  6. Take out baking tray from oven. (Watch out, it's going to be hot)
  7. Place fries in a single layer on greased baking tray. Make sure each stripe is not too close to each other to avoid sticking together while baking.
  8. Bake in preheated oven for 30 minutes or til crisp and lightly brown.
  9. Season with salt and pepper before serving.

Banana Scones

Ingredients

  • 150g flour
  • 2 teaspoons baking powder
  • 25g butter (melted)
  • 1 tablespoon sugar
  • 1 egg yolk
  • 2 tablespoons fresh milk
  • 1/2 teaspoon salt
  • 1 banana (diced)

Instructions

  1. Sift flour, baking powder in a bowl. Add salt.
  2. Add butter and mix til like breadcrumbs texture.
  3. Preheat oven at 200C.
  4. Make a well in the center, add sugar. Mix ingredients together.
  5. Make a well in the center, mix in egg yolk. Mix ingredients together.
  6. Add milk gently and keep stirring.
  7. Add banana diced. Mix gently.
  8. On a greased surface, scoop out small amount of mixture and shape into soft dough.
  9. Brush surface with milk before baking.
  10. Bake for 10 minutes or til gold brown.

Spiced Coleslaw

I love coleslaw and have gone through many recipes. This is by far my favourite one. It is always the first dish to disappear at any lunch or dinner party. Be sure to try it out!


Ingredients to make dressing

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon paprika
  • 1 teaspoon English mustard
  • 3 tablespoons mayonnaise
  • salt and pepper (seasoning)

Ingredients to make salad

  • 400g white or red cabbage (shredded)
  • 1 apple (unpeeled, pitted and sliced)
  • 300g carrots (grated)
  • 2 tablespoons gherkins (sliced or diced)
  • 2 teaspoons capers
  • some fresh parsley (chopped)

Instructions

  1. Mix all ingredients to make dressing.
  2. Wash, prepare and mix all ingredients to make salad.
  3. Mix 1 and 2 together.
  4. Serve fresh.

Ginger Salsa Sauce

Ingredients

  • 1-2 tomatoes (chopped)
  • 1/2 read onion (chopped)
  • red / yellow pepper (chopped)
  • 5cm stalk celery (chopped)
  • 1 tablespoons fresh ginger (grated)
  • 1 teaspoon ginger powder
  • 1 tablespoon chilli powder
  • small amount of fresh oregano
  • 1-2 cloves garlic (peeled, crushed and chopped)
  • 1 teaspoon tabasco
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon sugar
  • 1 teaspoon lemon juice

Instructions

  1. Wash, prepare and chop everything as indicated.
  2. Mix all ingredients together.

Ginger Pitta Bread


Ingredients

  • 200g strong white flour
  • 1 teaspoon baking soda
  • 2 -3cm ginger (grated)
  • 1 teaspoon olive oil
  • 180ml water
  • handful of spinach 
  • pinch of sesame (optional)
  • salt and pepper (seasoning)
  • butter


 

Instructions

  1. Sift strong white flour and baking soda. Mix in with grated ginger, olive oil, water, salt and pepper. Mix till smooth. Place dough in fridge for 30 minute.
  2. Heat butter in pan, fry chopped spinach and sesame for 5 minutes. Side aside.
  3. Cool down cooked spinach, mix with dough.
  4. On a clean and dry pan, heat with olive oil or sesame oil.

5.  Flatten dough into a circular shape and fry both sides till light brown.
6.  Serve pitta bread with curry or salad as desired.

Fertility Recipe

Seaweed is certainly not on our daily grocery shopping list, but you will find them in your local Chinese, Korean or Japanese convenient stores for sure. 

Seaweed Salad

 

Ingredients

  • seaweed                1 cup
  • apple                     1 (sliced)
  • baby cucumber     2 (stripped)
  • carrots                   2 (peeled and stripped)
  • salt                        about 2 teaspoons
  • water                     2 cups
  • white vinegar        3 tablespoons
  • sugar                     1 tablespoon




Instructions

  1. Blanch seaweed, drain and set aside. (boil in hot water briefly, then rinse with cold water)
  2. Make sure seaweed is well drained before serving.
  3. Dissolve 1/4 tablespoon of salt in water. 
  4. Prepare apple, seeded and thinly sliced. 
  5. Soak sliced apple in salted water for 30 seconds. Drain and set aside.
  6. Mix stripped carrots and baby cucumber together with 1.5 teaspoons of salt. Rinse away excess salt under cold water after 10 minutes. Drain and set aside.
  7. Mix all ingredients together. Chill (optional) and serve.
