Baked Pineapple Fried Rice

Ingredients

  • 1 fresh pineapple
  • 120g rice
  • 50g bacon
  • 10g peas
  • 10g carrots
  • 10g onion
  • 10g walnuts
  • 20g Mozzarella 
  • 10g Parmesan grated cheese
  • salt and pepper (seasoning)


Instructions


  1. Cook rice and drain. Set aside.
  2. Preheat oven at 200C.
  3. Cut off the top of the pineapple horizontally. 
  4. Scoop out the meat from the pineapple.
  5. Dice half of the pineapple meat and reserve the rest for a pineapple smoothie.
  6. Stir-fry diced onion, peas, carrots, bacon and pineapple for 5 minutes.
  7. Add cooked rice and walnuts.
  8. Season with salt and pepper.
  9. Scoop fried rice inside the pineapple shell.
  10. Sprinkle top with mozzarella.
  11. Bake in preheated oven for 10 minutes.
  12. Sprinkle with Parmesan grated cheese and serve.

Asparagus with Egg White Sauce

 




Ingredients

  • 200g asparagus
  • 2 egg whites
  • 2 tablespoons fresh milk
  • 1 teaspoon olive oil
  • small amount of cheddar cheese
  • 1 tablespoon lemon juice
  • salt and pepper (seasoning)
  • paprika (garnishing)

Instructions

  1. Blanch asparagus till tender, add lemon juice while blanching. (set aside)
  2. Whisk egg whites with fresh milk with a pinch of salt.
  3. Heat pan with oil on low heat.
  4. Pour egg white mixture in pan and keep stirring till half cooked.
  5. Turn off heat. Add cheddar cheese and give it a minute or two to melt.
  6. Pour egg white sauce over the blanched asparagus.
  7. Season with salt and pepper.
  8. Garnish with paprika if desired.

Chicken Curry Fruit Salad


Ingredients

  • 150g chicken breast or thigh (skinned)
  • 1 kiwi (diced)
  • 1/2 apple (cored and diced)
  • 1/2 stalk of celery (diced)
  • 20-30g cashew nuts (roasted)
  • 1 tablespoon raisins
  • 2 lettuce leaves

Salad dressing

  • 3 tablespoons plain yoghurt
  • 1/2 teaspoon curry powder
  • 2 teaspoon sugar
  • 2 teaspoons lime juice
  • salt (seasoning)

Instructions

  1. Pan fry diced chicken til cooked.
  2. Mix all ingredients with cooked chicken apart from lettuce.
  3. Mix all sauce ingredients in another bowl.
  4. Mix 2 and 3 together.
  5. Serve over leaves of lettuce.

Turkish Chicken Skewers

Ingredients for Turkish salsa sauce

  • 70g cucumber (diced)
  • 30g celery (diced)
  • 30g tomato (diced)
  • 30g plain yoghurt
  • 1 teaspoon honey
  • small amount of dill
  • salt and pepper (seasoning)

Ingredients for chicken

  • 5 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 teaspoon tomato puree
  • 2 tablespoon yoghurt
  • 1 teaspoon thyme



Instructions

  1. Marinate diced chicken in tomato puree, yoghurt and thyme over night.
  2. Preheat grill for medium-high.
  3. Thread chicken onto skewers.
  4. Grill for about 10 minutes or til cooked. 
  5. Turn over once 5 minutes into cooking.
  6. Mix all ingredients for salsa sauce.
  7. Garnish skewers with dill.
  8. Serve with salsa sauce.

Chicken Apple Burgers 


Ingredients

  • chicken breast (skinned and cut into chunks)
  • 1 potato (peeled and grated)
  • 1 onion (peeled and grated)
  • 1 apple (cored, peeled and grated)
  • 50ml chicken stock or 1/2 teaspoon of salt
  • 2 teaspoons lemon juice
  • 2 tablespoons cold water
  • handful of parsley (chopped)
  • cornflakes for coating burgers (crushed)
  • black pepper (seasoning)
  • olive oil

Instructions

  1. Squeeze some of the juice out from grated onion, potato and apple. Pour in food processor.
  2. Add chicken and all the rest of the ingredients. (except cornflakes and oil).
  3. Blend for 10-15 seconds.
  4. Scoop out content and shape mixture into 5-8 burgers.
  5. Roll each one in crushed cornflakes.
  6. Heat pan with olive oil and fry burgers on low to medium heat.
  7. You may choose to brush burgers with melted butter and grill in oven or barbeque.

Stir-fried Chicken with Mango

Ingredients

  • 300g chicken fillet
  • 300g mango
  • 30g red and green pepper
  • 3 garlic cloves (crushed and chopped)
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar

Sauce

  • 1 tablespoon mashed apple
  • 1 teaspoon sugar
  • 1 tablespoon soy sauce
  • 100ml water


Instructions

  1. Cut chicken fillet into stripes and marinate in soy sauce, lemon juice and sugar at least 30 minutes before cooking.
  2. Cut red and green pepper and mango into stripes. Set aside.
  3. Heat pan with oil, add crushed garlic and chicken stripes.
  4. Stir-fry for 3 minutes.
  5. Add red, green peppers, apple mashed, sugar, soya sauce and water.
  6. Stir-fry for 5-8 minutes or til chicken is cooked.
  7. Turn off heat. Stir in mango and serve.

Roast Chicken with Asparagus

Ingredients

  • 8 chicken thighs
  • 300g asparagus (trim the ends)
  • 300g cherry tomatoes
  • 10 cloves garlic (peeled and crushed)
  • 1 lemon  (halved)
  • 1 tablespoon olive oil
  • handful of rosemary sprigs
  • Salt and pepper (seasoning)


Instructions

  1. Preheat oven at 180C.
  2. Marinate chicken thighs in salt, pepper, rosemary sprigs, lemon zest, chopped garlic and lemon juice an hour before cooking.
  3. Bake chicken thighs in preheated oven for 10-15 minutes.
  4. Remove baking tray from oven, place remaining garlic (without chopping, just crushed) under and around chicken together with asparagus and cherry tomatoes.
  5. Return to oven and bake for another 10 minutes or till chicken is cooked.
  6. Server hot.

Spinach and Potato Frittata

Ingredients

  • 2 New potato (peeled and diced)
  • 1/2 onion (diced)
  • handful of spinach
  • 3 eggs (lightly beaten)
  • some fresh coriander (finely chopped)
  • 100g fetta cheese (diced)
  • salt and pepper (seasoning)

Instructions

  1. Soak diced potatoes in salted water for 10 minutes. Drain and set aside.
  2. Heat pan with oil on medium heat. Fry diced potatoes and onion til potatoes turn brown.
  3. Add beaten eggs, fetta cheese, green peas, spinach to pan. 
  4. Pick up pan and swirl a little to let the eggs spread evenly before setting.
  5. Season with salt and pepper.
  6. Serve when eggs are cooked.

Beef Cheddar Skewer

It is important to get enough iron and protein during pregnancy especially in first trimester when fetus is growing at such rapid rate. Studies showed that consuming beef on daily basis in first trimester of pregnancy helps brain development in fetus which may lead to higher IQ. Calcium is also essential for fetus' bone development, therefore eating diary products such as cheese, milk, yogurt are most vital while you are pregnancy.


Ingredients

  • 500g minced beef
  • 60g parmesan cheese (grated)
  • 150 cheddar cheese
  • 1/2 onion (finely chopped)
  • some fresh coriander (finely chopped)
  • 2 cloves garlic (crushed and chopped)
  • 1 egg (lightly beaten)
  • 1 lemon (zest)
  • 3 tablespoons breadcrumbs
  • 1 tablespoon ketchup 
  • salt and pepper (seasoning)
  • 1 tablespoon olive oil

Tips: If you are using wooden skewers, soak them in salted water before use to avoid splinters.


Instructions

  1. Cut cheddar cheese in 5 cm long small columns.
  2. Place mince beef in a large bowl. Add garlic, onion, coriander, ketcup, parmesan cheese, breadcrumbs, lemon zest, salt, pepper and olive oil.
  3. Mix all ingredients well until mixture is slightly sticky. 
  4. Place bowl in fridge for 30 minutes.
  5. Stick cheddar cheese into wooden skewers one by one.
  6. Take a portion of beef mixture, flatten on palm and wrap around each skewer with cheddar cheese.
  7. Brush beaten egg and breadcrumbs around meat.
  8. Heat pan with oil on medium heat.
  9. Fry skewers evenly on all sides till brown or cooked.

Stir-fried Chicken with Fruits


Ingredients

  • 500g chicken breast or thigh (diced)
  • a floret of broccoli (chopped)
  • 100g fresh or canned pineapple (diced)
  • 1 apple (pitted and diced)
  • salt and sugar (seasoning)
  • olive oil or sesame oil
  • 2-3 cloves garlic (peeled and crushed)


Instructions

  1. Marinate chicken for an hour with salt, sugar, sesame oil at least at hour before cooking or longer.
  2. Wash and chop broccoli into bite size pieces. Boil for 5 minutes, set aside.
  3. Heat pan with olive oil in low heat. Add crushed garlic, fry for 2-3 minutes to bring out the fragrance. 
  4. Add chicken, stir-fry for 5-8 minutes or till cooked.
  5. Add broccoli, pineapple and apple dices. Stir-fry for 2 minutes.
  6. Turn off heat.
  7. Serve with rice or pasta.

Stir-fried Beef Fillet with Strawberry

Beef is good source of iron for blood making while strawberries are full of Vitamin E and peppers are rich in Vitamin C.



Ingredients

  • 80g beef fillet (diced)
  • 3-5 pieces strawberries (halves)
  • 1/2 green pepper (diced)
  • 1/2 yellow pepper (diced)
  • 60g green beans
  • 2-3 cloves of garlic (crushed)
  • 2cm ginger (sliced)
  • salt, pepper, sugar. (seasoning)






Instructions

  1. Marinate diced beef fillet salt, pepper and a teaspoon of sugar for 20 minutes before cooking.
  2. Wash and prepare all fruits and vegetables.
  3. Heat pan with oil in medium heat, add garlic and ginger first, follow by diced beef.
  4. Stir-fry for a minute, then add green beans. green and yellow pepper.
  5. Stir-fry for another 2 minutes, add strawberry and turn off heat.
  6. Serve with rice or pasta.

Sole Fillet with Tomatoes

Ingredients

  • 2 sole fillets
  • 2-3 tomatoes (diced)
  • 1/2 onion (diced)
  • 1 tablespoon corn flour
  • pinch of salt
  • 1 egg white
  • pepper 
  • 2 tablespoons fresh lemon juice
  • 1.5 tablespoons sugar
  • 1 tablespoon tomato puree
  • 1/2 teaspoon corn flour
  • 4 tablespoons water
  • oil

Instructions

  1. Wash and dry sole fillets. Cut into pieces.
  2. Marinate fillets with 1 tablespoon corn flour, salt, egg white and pepper for 10 minutes.
  3. Heat pan with oil. Fry diced onion and tomatoes for 5-10 minutes.
  4. Add fillet pieces and all remaining ingredients. 
  5. Simmer on low heat for 5 minutes or till cooked.

Pork Fillet in Ginger Sauce

 

Ingredients

  • 500g pork fillet
  • 2 tablespoons sugar
  • a slice of ginger
  • 2-3cm ginger (grated and juiced)
  • 1 tablespoon olive oil or sesame oil
  • 2 cloves garlic (crushed)
  • 2 cups water
  • 2 teaspoons salt
  • 1 teaspoon English mustard
  • pepper (seasoning)


Instructions

  1. Marinate whole piece of pork fillet for at least 30 minutes in sugar, salt and ginger juice.
  2. Heat pan with olive oil or sesame oil. Fry pork fillet in low to medium heat.
  3. Add chopped and crushed garlic and fry pork till golden brown.
  4. Mix all remaining ingredients from the list in a bowl.
  5. Add to pan and cook in low heat till pork fillet is done.
  6. Slice and serve with remaining sauce from the pan.

Apple Cinnamon Pork Fillet

 

Ingredients

  • 500g pork fillet
  • 1 red onion (sliced)
  • 1 apple
  • some raisin (garnishing)
  • 2 cloves garlic
  • 2 tablespoon olive oil

Sauce

  • 1/2 cup white wine (optional)
  • 2 tablespoon brown sugar
  • 1 teaspoon cinnamon powder
  • 1/2 cup chicken stock

 Seasoning

  • 1 teaspoon curry powder
  • 2 tablespoon corn flour
  • 1 teaspoon salt
  • pepper (some)

Intructions

  1. Mix seasoning in a bowl. Set aside.
  2. Preheat oven at 180C.
  3. Chop pork fillet into chunks and marinate with seasoning.
  4. Cut and pit apple into 8 slices, soak in salted water along with raisins. Set aside.
  5. Place sliced red onion at the bottom of a deep baking tray with crushed garlic and oil.
  6. Place pork fillet over red onion.
  7. Drain apple and raisin. Dry and place over pork fillet.
  8. Mix sauce ingredients in a bowl.
  9. Pour mixture evenly over baking tray.
  10. Cover with foil. Bake for 10-15 minutes.
  11. Remove foil and bake for another 10 minutes or till meat is cooked.

Honey Glazed Chicken Drumstick

 

Ingredients

  • 5 chicken drumsticks
  • 1 stalk spring onion     (chopped)
  • small piece ginger       (grated)
  • 2 cloves garlic             (peeled and chopped)

Ingredients for Honey Glazed

  • 1 tablespoon white wine
  • 1 tablespoon honey
  • 2 tablespoon ketchup
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Cut 2-3 slashes on drumsticks with knife.
  2. Mix all ingredients for honey glaze in a large bowl.
  3. Add chopped spring onion, grated ginger and chopped garlic to glaze.
  4. Pour glaze in a pan, simmer on low heat till thicken.
  5. Preheat oven at 180C.
  6. Place drumsticks on a rack over a baking tray with foil on.
  7. Brush honey glaze on drumsticks generously. 
  8. Bake for 10 minutes.
  9. Take out the drumsticks, turn them over and apply honey glaze on the other side.
  10. Bake for another 10 minutes or till cooked.

Bake Chicken with Coconut Milk

Ingredients

  • 300g chicken thigh   (cut into pieces)
  • 1 carrot  (peel and dice)
  • 2 potatoes (peel and dice)
  • 1 onion (chunk chop)
  • 2 tomatoes (cut in 4 quarters)
  • 2 slices cheese
  • 150g coconut milk
  • 1 tablespoon plain floor
  • 3-4 tablespoons cooking oil
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons water


Instructions

  1. Heat pan with oil, fry chicken pieces for 1-2 minute on medium-high heat. Set chicken aside.
  2. Mix half cooked chicken with curry powder, salt, sugar and water.
  3. Please chicken together with sauce in a oven friendly casserole dish, add potatoes and carrots. Steam casserole dish for 30 minutes.
  4. Preheat oven at 180C.
  5. Take casserole dish out. Mix in coconut milk, plain flour, onion, tomatoes and cheese. Mix well.
  6. Bake in preheated oven for 20 minutes or till surface turns golden.

Eating nuts while pregnant

Unless you or your partner has any kind of nuts allergies, recent studies showed that consuming nuts during pregnancy may actually lower the risk of your baby developing nuts allergies after being born.

Pine nuts

 

Pine nuts supply all amino acids along with a wealthy source of vitamin A, thiamin, riboflavin and niacin, as well as folate and vitamin C.

 

Stir-Fried Chicken Heart & Pine Nut


Ingredients

  • chicken heart                            350g
  • pine nut                                    50g
  • red, green, yellow pepper        1 of each (diced)
  • garlic                                        2-3 cloves (chopped)
  • ginger                                       5cm (grated)
  • corn flour                                 2 teaspoon
  • salt (seasoning)
  • sugar (seasoning)
  • black pepper (seasoning)
  • white wine (seasoning)           1-2 tablespoon


 Instructions

  1. Wash and rinse chicken heart thoroughly and dry.
  2. Mix with 1/2 grated ginger, 1 tablespoon of white wine, corn flour, salt and sugar. 
  3. Marinate for half an hour before cooking.
  4. Preheat oven at 200C, spread pine nut evenly on a baking tray and bake until light brown.
  5. Heat pan with oil, stir-fry chicken heart until light brown, drain oil and set aside.
  6. Heat pan again, add garlic and remaining grated ginger. Then, add diced pepper, sugar, salt, black pepper and white wine. Stir-fry on high heat for 5 minutes, then add pine nut. 
  7. Fry for another 3 minutes and serve.
The American Journal of Clinical Nutrition published an article last April showing that eating nuts does not cause weight gain or increase the waist line and nuts contain good fibers, unsaturated fats, vitamins, and minerals, which are important things in a good daily diet. The New England Journal of Medicine found that eating nuts increases life expectancy and reduces the chances of getting cancer or cardiovascular disorders later in life.

Let's make the most of that Thai Green Curry Paste you've made. Please note that you can substitute chicken into other meat or seafood for this recipe.


Thai Green Chicken Curry

Ingredients

  • chicken thigh                 500g (diced)
  • eggplant                         1/2 to 1 (cut into large pieces)
  • green beans                    a handful (chopped)
  • lemon leaf                      6
  • red chilli                         1-2 (chopped)
  • basil leave                      2-3
  • coconut milk                  3-400ml
  • palm sugar or sugar       2-3 tablespoons
  • fish sauce or salt            (seasoning)
  • Thai green curry paste   2 tablespoons

Tips: Heat pan with oil, pan fry chopped eggplant for a few minutes. Set aside.

 

Instructions

  1. Heat pan with oil on low heat, place green curry paste in pan.
  2. Place diced chicken in pan and stir-fry. Mix well with curry paste using a spatula.
  3. Stir-fry chicken for about 5 minutes.
  4. Stir in green beans, lemon leaf, red chilli and basil leave. Stir-fry for 1-2 minutes.
  5. Add coconut milk, little by little and keep stirring.
  6. Stop adding coconut milk when curry sauce reach your ideal consistency.
  7. Add palm sugar and fish sauce. Stir for another minute or until palm sugar all melted.
  8. Serve hot with rice or noodles.

Why not go crazy with those fertilizing garlic for a change?

Crispy Garlic Chicken




Ingredients

  • 1 chicken
  • 5 garlic bulbs
  • 5-10 shallots
  • 1 bay leave
  • salt
  • Malt Syrup

Instructions

  1. Prepare garlic bulbs, shallots, bay leave and salt. Mix together and use it to marinate whole chicken. Spread evenly both inside and outside.
  2. Marinate for at least 4 hours.
  3. Rinse marinated chicken with hot water. This will cause chicken skin to shrink and become crispy after cooking.
  4. Hang up chicken to air dry thoroughly.
  5. Dilute malt syrup with water and brush generously on the surface of the whole chicken.
  6. Air dry over night or for at least 8 hours.
  7. When chicken is dried and ready. Heat large pan or wok with generous amount of oil.
  8. Place chicken in pan and turn to low heat. Cook for 15 minutes or until chicken is well done.
  9. Keep pouring hot oil over chicken while cooking.

Make your own Chicken Broth

I've included chicken broth in quite a few of my recipes, it only feels right to make your own chicken broth if we are aiming for healthy and natural diet. Who knows what have been put into those canned chicken broth and the excessive amount of sodium that comes with the package. The following recipe is enough to make three pints of chicken broth.

Tips: You can easily replace chicken with left over turkey and it's shell after Thanksgiving and Christmas to make a Turkey Broth. Which is just as good and nutritious!!





Ingredients

  • 1 large chicken including giblets   (cut into 4 quarters)
  • 2.25 liters of water
  • 2 large onions    (chopped)
  • 3 large carrots    (chopped)
  • 2 leeks                (white part only, sliced)
  • 1 large parsnip   (peel and chopped)
  • parsley               (small amount)
  • 1 bay leaf
  • 10 ml tomato puree
  • salt and pepper   (seasoning)

 Instructions

  1. Wash chicken and giblets. Place it in a large pan and cover with water.
  2. Bring to boil slowly and remove any scum from the surface with a large spoon.
  3. Add all the rest of the ingredients and simmer on low heat for 3-4 hours.
  4. You may remove flesh from the bones after 2 hours. Set aside for use in other recipes. Return all the bones back to pan for more simmering.
  5. After cooking, turn off heat. 
  6. Let it cool over night in room temperature or in fridge.
  7. You will find a layer of fat set on the surface the next day, remove it and stock your broth in zipper bags or plastic containers to freeze.
  8. Store about 300 ml per bag or as desired.
