Chicken Curry Fruit Salad
Ingredients
- 150g chicken breast or thigh (skinned)
- 1 kiwi (diced)
- 1/2 apple (cored and diced)
- 1/2 stalk of celery (diced)
- 20-30g cashew nuts (roasted)
- 1 tablespoon raisins
- 2 lettuce leaves
Salad dressing
- 3 tablespoons plain yoghurt
- 1/2 teaspoon curry powder
- 2 teaspoon sugar
- 2 teaspoons lime juice
- salt (seasoning)
Instructions
- Pan fry diced chicken til cooked.
- Mix all ingredients with cooked chicken apart from lettuce.
- Mix all sauce ingredients in another bowl.
- Mix 2 and 3 together.
- Serve over leaves of lettuce.
