Stir-fried Chicken with Mango
Ingredients
300g chicken fillet
300g mango
30g red and green pepper
3 garlic cloves (crushed and chopped)
1 tablespoon soy sauce
1 tablespoon lemon juice
1 teaspoon sugar
Sauce
1 tablespoon mashed apple
1 teaspoon sugar
1 tablespoon soy sauce
100ml water
Instructions
Cut chicken fillet into stripes and marinate in soy sauce, lemon juice and sugar at least 30 minutes before cooking.
Cut red and green pepper and mango into stripes. Set aside.
Heat pan with oil, add crushed garlic and chicken stripes.
Stir-fry for 3 minutes.
Add red, green peppers, apple mashed, sugar, soya sauce and water.
Stir-fry for 5-8 minutes or til chicken is cooked.
