Stir-fried Chicken with Mango
Ingredients
- 300g chicken fillet
- 300g mango
- 30g red and green pepper
- 3 garlic cloves (crushed and chopped)
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon sugar
Sauce
- 1 tablespoon mashed apple
- 1 teaspoon sugar
- 1 tablespoon soy sauce
- 100ml water
Instructions
- Cut chicken fillet into stripes and marinate in soy sauce, lemon juice and sugar at least 30 minutes before cooking.
- Cut red and green pepper and mango into stripes. Set aside.
- Heat pan with oil, add crushed garlic and chicken stripes.
- Stir-fry for 3 minutes.
- Add red, green peppers, apple mashed, sugar, soya sauce and water.
- Stir-fry for 5-8 minutes or til chicken is cooked.
- Turn off heat. Stir in mango and serve.
